Coconut rice

2 cups jasmine rice
1 teaspoon salt
2 cups coconut milk
1 3/4 cups water
1 tablespoon butter
1 cup sugar
1/2 cup coconut flake
1oz coconut extract

mix all liquid ingredients and sugar then put in a pan
add salt, butter and rice to the pan with a lid
cook till done
take off heat and leave lid on

Ok, this is seriously yummy. Even failing to fully cook the rice I ate more than I really ought to have.

Smoked Pina Colada Chicken

14oz coconut milk
16oz pineapple juice
1/4 teaspoon cayenne powder
1/2 pound brown sugar
Tony Chachere Creole seasoning
Onion Powder
Garlic Powder
Salt
Cardamom
2 pounds chicken (I used boneless/skinless breasts)
Foil half pan

Combine coconut milk and pineapple juice in a bowl and stir well with a wisk till blended together
Mix in the brown sugar crushing any lumps
Mix in the spices

Place chicken in half pan and pour the liquid mix on it.

Put the pan in a smoker and cook slowly.

Just pulled it out of the smoker after about 5 hours and tasted a piece of tenderloin. Nice mix of heat and sweet.

Had a piece cold yesterday and it was good, today I decided to put another piece and some of the broth/marinade in my oatmeal bowl and heat it up. O M G so delicious, I want to warm some more of the broth up and drink it the flavors are so good. Definitely in my top 5 creations, wish I'd done more than 2LBs of chicken now.

4 diced large tomatos
2 chopped green long peppers
2 tablespoons of Cilantro
2 tablespoons diced white Onion
1/4 cup of lime juice
Salt and pepper to taste

Place tomatos on stove tops with open flame until they're browning.
Chop up the tomatos when done and place in blender.
Remove vein and seed out of green peppers, chop, throw in blender.
Place onions and cilantro into blender.
Pour lime juice in, dash of salt, sprinkle with fresh pepper.
Cover blender and let it chop it all up!

Grab some totopos (tortilla chips) or throw it on your favorite Mexican food recipe and enjoy! Easiest yet very spicy salsa recipe!

Unmeasured amount of sweetened lime juice
Unmeasured amount of honey
1/8 teaspoon cayenne powder
1/8 teaspoon cardamom
1 teaspoon ancho chili powder
2 teaspoons corn starch

mix and heat in a sauce pan until thickening begins

This is the first time I've made it and put it on some smoked turkey tonight.

If I make it a second time I'll cut back on the amount of honey and use a less powerful tasting sweetener to make up the loss.

Tried it out on some smoked pork roast last night, quite good and overall the flavor seemed better after sitting overnight.

Flour tortilla
Apple filling (any pie filling)
Cinnamon & powder sugar
Deep fry fruit burrito
Sprinkle with powder sugar & cinnamon
Serve with scoop of ice cream or whip cream, (cool whip)

Sounds delicious. I love apples and cinnamon. I would prefer the icecream. Thank you for youor contribution and feel free to invite me over when next you make it.
